#throwback to yesterday’s HEAVENLY #dinner which was this Mexican dinner bowl 😏 Creamy polenta with a Tex-Mex-Mix and CHEESE 😍 This was puuuure heaven and definitely one of my new fave-meals 🤤👌🏻 Recipe is down below 👇🏻 Don’t know why but my mood is soo good today even though I still have school until 5pm 😂🙌🏻 But there are only 3 days left until holidays so I will somehow get through this day 😌
I have German lesson now so no longer caption atm 🙆 Have a nice Monday and see you later 👋🏻😇 Mexican Polenta 👩🏻🍳:
- 60g of polenta (dry)
- 1 zucchini
- 1 onion
- 1 can of corn-kidney-bean mix (140g)
- cheese - 100ml milk
- 100g sieved tomatoes - 200ml vegetable stew
- curry, paprika spice, salt, pepper
For the polenta heat up the milk with the vegetable stew and slowly stir in the polenta. While stirring let it cook for about 1 minute and put the pot off the heating plate. Spice the polenta up with the spices you want, put it aside and top it with a lid.
For the Tex-Mex-Mix cut the zucchini, the onion and heat up oil in a pan. Now add the onion and the zucchini pieces and roast them until they have a nice colour. Turn the heat down on medium heat, add the sieved tomatoes and spice everything up with curry, paprika spice and salt and pepper. If necessary also add a bit of water. Let it cook for about 3 minutes and finally add the corn-kidney mix. Mix everything and let the mix cook on low heat for another 3 minutes.
Serve the polenta together with the Tex-Mex-Mix and top everything with cheese. To melt the cheese just heat your plate up in the microwave for 1 minute and the PERFECT Mexican meal is DOOONE 😍👌🏻
