Dare I say it, I have been happy these last few days. I don’t even know why, because next week is my yearly health check up and that usually comes with a lot of fears. Only that this year, one thing has changed. Even if they found out I wasn’t healthy, right now, in this moment, there is nothing I can do about it. So I might as well be happy. I am here, I am well. MINI VEGAN CHOCOLATE CHIP PUMPKIN BREAD squares are here 🍫🎃 These came about when I started to make my vegan pumpkin banana bread yesterday and realized that I did not have spotty bananas 🙈🙈 BUT I am SO happy with how they turned out. They are filled with fiber, healthy fats and of course, some sweetness. The recipe is below, will be up on the blog and linked in stories. Don't forget if you make my creations tag #eatwellwithsari. Much love to you all. — RECIPE— • 1C Organic Pumpkin Puree • 1 C Creamy Almond Butter • 1/2 C Maple Syrup • 2 Tbsp Coconut Oil (Melted and Cooled)
• 1tsp Vanilla Extract
• 1 C Almond Flour
• 1/4 C Flaxmeal (for fiber / optional)
• 1/2 tsp baking soda, baking powder
• 1 tsp of cinnamon and pumpkin spice
• pinch of sea salt
•1 C dairy-free dark chocolate chips • Combine all wet ingredients and mix well. Add in dry ingredients. Mix again until there are no chunks. Add in chocolate chips. Grease a muffin pan or brownie pan (what I used, I will link it in stories) and scoop a large spoonful of batter into each. Shake and smooth with a spoon to even out the batter. • Bake for 25 minutes on 350. ENJOY and top with yummy nut butter if you love that ish like me 💕! •

Research shows that you eat more when you eat out of a bigger container, even if the food is not very good.
Fill your plate with as much food as you are going to need for the entire meal. Cover up the containers and put them back in the refrigerator before you sit down at table and begin eating.
