The de facto motto of Salvador de Bahia is “Smile! You’re in Bahia!!” The most effective ambassadors of this ethos: the Baianas de Aracajé. Dressed in traditional clothing that features baroque, colonial Portuguese dress infused with West African elements, the warmth and cheer of these amazing women is conveyed with smiles as well as the acarajé they sell. This street food delicacy is made up of spices and black beans formed into fritters and deep fried. They are then split open and filled with a spicy mixture of seafood, onion, peppers and tomatoes. Additional ingredients including peanuts, coconut and cashews are common. The aroma and taste hit your palate like a warm smile.
