vegan cheese board | almond soft cheese with basil herb oil, quinoa chia crackers, sliced apples, grapes
found this almond feta in an old magazine and knew i had to try it. i adapted the recipe and finally made it a few days ago (see my story for the process!) i’m obsessed — the mixture is creamy when you first blend it, but when strained in a cheesecloth and baked it turns into this crumbly soft spread that tastes like a cross between ricotta and feta. served here with @germinal.organic crackers— they’re both vegan and gluten-free and a perfect base for the cheese spread. some next-level snacking right here
BAKED ALMOND FETA CHEESE
- 1 cup blanched sliced almonds*
- 4 tbsp lemon juice
- 3 tbsp olive oil
- 1/2 cup water
- 2 cloves garlic
- 1 1/4 tsp salt
- 1 tbsp fresh herb of choice (thyme, rosemary, basil, etc.), optional
Add all ingredients to a high-speed blender and process for 5 minutes, until thick and creamy. Place a triple layer of cheesecloth in a strainer and spoon the mixture into the cheesecloth. Tie the ends into a ball and place strainer over a bowl to drain and chill in the refrigerator for at least 12 hours.
Remove cheese from cloth and transfer to a greased baking dish or a parchment-lined baking sheet. Bake at 350F/180C for 40 minutes until golden and cracked, and top is slightly firm to the touch. Let cool, drizzle with olive oil and herbs (optional), and serve! It’s delicious either on its own as a spread with crackers or in recipes in place of feta and ricotta.
*Blanched = peeled. You can substitute with 1.5 cups ground almond meal, or use whole raw almonds that you can blanch yourself: soak the almonds for a few hours, then bring a pot of water to boiling and add them in. boil for 60 seconds, drain in a strainer under cold water, and pinch to remove skins.
* makes one small rind (double the recipe for the size shown in the photo)

The hugest of thanks go to @neworleansicecream for sending ALL of their ice cream! Oh, this picture isn't even all of it. There's also six boxes of Café bars (made with cold brew coffee and ice cream) and four Po'Boy ice cream sandwiches. I've tried the Bananas Foster flavor before, and it's incredible! It was a repeat buy for me until @festfoods in Wisconsin stopped stocking it... Not cool, Festival Foods. Anyway, thanks again @neworleansicecream, I can't wait to dig into all this ice cream! Check their website for sellers or to buy online!
