Tofu scramble with spinach is one of my all time favorite weekend breakfasts. I keep it simple, with olive oil, lemon, salt and pepper and sautéed spinach. Cook it like you would cook scrambled eggs. Great way to get some protein and fuel for the Saturday ahead. You can even add in turmeric to give it a more vibrant color and add anti-inflammatory benefits.
