Because it wasn't just a smoothie. It was a smoothie I'd thought about starting my day with for weeks. It was a smoothie I'd tormented myself with. It was a fucking smoothie I dreamed of bringing into my life. It was a fucking smoothie but for me, it was pure grit and determination. However I now understand my smoothie game was weak and I want to try way more flavours and things in them. What a world I have suddenly seen.
The fact of the matter, I'm fed up of dreaming. Of dreaming of the life I want to be living. Instead, I'm just going to fucking make that life happen. I won't give up until I have achieved it. The world can shit on me ten times over and I will shit back at it with some explosive diarrhoea. So I sipped away this morning as I did my pole instructor training sat at my desk reminding myself that it's not weight, food,
Numbers or calories. I don't have time for those things in the life I want. It's just fuel that I will have to make time for in the life I want.
Today was a huge step for me. Because I started my pole instructor training. Not because of the smoothie. The smoothie is a baby step into the grand scheme of things. I've made a hell of a lot of steps back to where I was before my most recent hiccup with Ana, once I return to that point, I will only keep pushing for my life harder. All these baby steps add up. Trust a girl with short legs and tall friends on that one, my life is a constant light jog in heels.
Sweet Potato Protein Waffles (or Pancakes!) (DF, GF) 🥞🙋🏼
I love you all but why the hell did none of you convince me to buy a waffle maker earlier??? THIS THING HAS CHANGED MY LIFE. I don’t even’t know where to begin with the endless recipe ideas I have, but to kick things off, here’s a savoury recipe for once and the start of #wafflewednesday.
These Sweet Potato Protein Waffles are SO easy to make, are naturally packed full of protein (without the need for protein powder), are high in fibre (15g fibre per serve!), and they make the perfect vehicle for numerous topping ideas (see my suggestions below!).
I also tested this recipe as pancakes for those of you who don’t have a waffle maker (why don’t you???!) or who just prefer pancakes, and it produced the fluffiest pancakes ever, with no modifications needed!
▪️150g sweet potato (note: pumpkin would also work!)
▪️30g coconut flour
▪️90ml egg whites
▪️100ml unsweetened almond milk
▪️A pinch of Himalayan pink salt
1️⃣Boil or roast your sweet potato until soft.
2️⃣Using a fork (or food processor!), mash your sweet potato to form a puree.
3️⃣Pour in the milk and egg whites, and continue mashing.
4️⃣Stir in the coconut flour and salt until combined.
5️⃣Pour batter evenly across your waffle maker, or in a pan if you’re making pancakes!
6️⃣Heat until cooked, and serve immediately with avocado, a poached egg (plus vegemite if you’re like me) or tinned tuna!
✅Serves: 1, making 4 large waffles or 4 large pancakes
✅Macros: 278 calories, 36C/5F/18P
BADGE OF MOTHERHOOD
Can you see those little red squiggles that have snuck their way onto my hip? Those are stretch marks! I was able to avoid these bad boys for nearly 9 months, but about two weeks ago they started to make their appearance one at a time.
One of my biggest fears (besides the overall health of my growing child) has been getting stretch marks. But here they are and I don’t hate them.
In fact, they mark my ability to grow and support new life and that is BEAUTIFUL.
It’s funny how something I was so worried about has turned out to be something that I am willing to plaster on the internet, but I figured I probably am not the only one that has struggled with these sneaky squiggles!
So here you go world! I finally earned my STRIPES! (Ya see what I did there right?)
