Still feels so unreal that I got to spend the week hanging out with Eric Ripert in the Cayman Islands this week. It’s not everyday you get to play pétanque (similar to bocce ball) on the same team as one of the most famous chefs in the world — even if you lose and disappoint him — and then have him cook you a five course dinner afterwards. Murielle Vuillemier, Brisbane’s very own Swiss Chocolatier, advises you must use your senses to discern and enjoy good quality chocolate.
Murielle says good chocolate must be glossy to the eye and have no cloudy bloom that indicates the sugar has separated and come to the surface.
Listen closely when you break good chocolate it should CRACK from the higher content of pure cocoa butter.
Of course chocolate must be aromatic and smell the roasting notes of the cacao been.
And taste! Well good quality chocolate should sit in your tongue and slowly melt at body temperature in your mouth, you shouldn’t have to chew on it.
Good chocolate is to be savoured and enjoy the subtle roasting notes just like one might enjoy the signature notes of different varieties of grapes in wine or champagnes.
The stiletto made from 78% cocoa was perfection with the berries. Perfect 👌🏻 Do the stilettos 👠 come in different types of chocolate?

Sometimes you just have to go for it. I’ve always been a little intimidated to make wings at home. And also a little lazy- because I assumed it was a process. But I was craving some spicy Asian flavors and decided to give these a go: Spicy miso glazed chicken wings. The glaze is miso paste, water, maple syrup, tamari, ginger, garlic and fresno chili. The process was simple and the result was delicious! 😋 Garnish with sesame seeds, cilantro and thinly sliced fresno chili.
