My second attempt at smoked venison roast... this time I brought it to 150 degrees and pulled it out to rest in a cooler for about an hour and it was fantastic. Last time I brought it to 180 and it was way dried out.
“What is venison?” asked Trod. “Deer! Ya know, those hooved beasts with bones sticking out from their head.” Squirrel put his hands up to his head mimicking antlers. “Ya?” “So, a goat?” “No…” Squirrel looked around the inn and then pointed above the fireplace. “That!” An impressive head of a ten-pointed buck hung proudly on the stone wall. Its face was shadowed hauntingly from the fire’s dancing light below. Glass eyes twinkled, giving life to its fierce scowl. Trod sat back. “That’s the same animal in the cave you did that weird thing to,” Kira informed seeing Trod seemingly intimidated. “I’m not sure it is wise to eat such a powerful and majestic beast,” said Trod, eyes still locked with the mount’s.
Kira and Squirrel exchanged looks then burst into laughter.
Trod furrowed his brow at them. “Is he not?” “No, Trod. Deer are very docile, timid animals. Far from powerful and majestic,” Kira explained as she continued to giggle at the idea. “It’s horns, are they not made to express power?” Trod stared back at the mount.
Kira looked too. The head was muscular and strong, and its antlers towered around the beast elegantly. “Those are antlers, and yes they do." “Like a crown,” Trod understood.
Kira smiled at his relation. “Sure, like a crown.” “See, majestic,” he said with all seriousness and then took a sip of ale, concluding his discussion. “Delicious, you mean!” Squirrel corrected, licking his lips while he watched the innkeeper arrive with a tray of food.
