Sometimes I go into the kitchen with no idea what I’m going to cook. Tonight was one of those nights. I opened the fridge and began to pull things out. Chop and season veggies. Clean and season chicken. Throw some stuff in the rice cooker and create dinner. It was so good. I roasted cauliflower in the oven. Roasted carrots, seasoned with honey, crushed red pepper flakes, minced garlic, and salt. Cut up spinach and kale and stewed it. Threw rice, coconut milk, and seasonings in the rice cooker. Pan seared chicken thighs in the cast iron wth onions peppers and garlic. Then added water coconut milk, honey, and tika Marsala seasoning to the drippings. Currently treading water with work, family and home but the one thing that is consistent is that dinner is planned. I was gone again Monday so hubby jumped in and handled dinner. No video or pic but the kids said his crockpot roast was good. .
Ok not going to lie. I have never really liked meatloaf.. UNTIL I made this one! My husband always asks me to make it and I just shrug it off because I’m not a fan but this one changed my mind!! It’s so tender and doesn’t actually stay in “slices”. For me.. I like this! But the real kicker here is that I made this in the INSTA POT!
• start out by making your own bread crumbs if you’re feeling up for it. I used @nativebread because GF is important to me. Just popped a piece or two in the oven until toasty then used food processor to make crumbs.
•combine all these ingredients in a bowl: 1 pound GRASS FED beef, 1/2 cup of your prepared bread crumbs, 1 pasture raised egg, 1/3 cup diced onion, 1 tsp garlic powder, 1 tsp parsley, salt/pepper, sneak a dash of turmeric in there, 1/4 cup bbq sauce (I used @tessemaes brand. Be sure to READ the labels when buying one)
• shape into a loaf and fold tin foil around it to hold shape. Place on a rack in you’re pressure cooker
•below the rack I cut up sweet potatoes and laid them in the bottom with some broth (for mashed sweet potatoes)*optional
•I just used the meat setting I believe. But can cook on manual for 20-25 minutes
• while cooking combine 1 tbsp of coconut sugar, 1 tbsp mustard, 2 tbsp ketchup, 2 tbsp of bbq
• once cooked take loaf out and put on baking sheet with foil. Brush mixture over top and broil for a couple minutes
I served with mashed sweet potatoes not pictured and mushrooms and onions because I love the combo❤️
Be careful to read the ingredients while buying mustard, ketchup and bbq! Buying condiments and sauces are hard! So be careful!!

Dinner tonight was super easy to put together! Crockpot pork loin, cauliflower rice mixed with a little cream cheese and S&P, and sautéed squash and zucchini. All you have to do for the pork loin is spray the crockpot with cooking spray, place in pork loin, then cover with 1/2 cup of teriyaki sauce. Cook on low for 6 hours and enjoy! I hope someone is able to enjoy this super simple meal this week!
Eating is all about balance right? So we had French fries and cheesy buttery ‘hamies’. At least my salad portion was bigger right?! By the way, this Greek-ish salad was delish. What did you have for dinner?🍽 .
