Chicken Enchiladas much in the style I grew up with. It was a simple red sauce, simple poached shredded chicken, fresh garnishes and yes, fried potatoes. A slight variation is to include carrots with those potatoes and saute them in some of the enchilada sauce. My job was to shred the lettuce, slice tomatoes and onions.
