I can’t even remember the last time I’ve had a @cornettouk - definitely before I went vegan, so you can tell: it’s been a while! I used to eat this nearly every day as a kid during summer - after school my grandad used to pick me and my brother up to venture around the village with us & the little ice cream store in my hometown was always one of our favourite stops along these summer walks 🍦☀️
So happy that @cornettouk have now launched a vegan version of my favourite childhood classic - every bite taking me straight back to memories of gorgeous summer days with my grandad. (Yes, bite! Cause I actually bite into my ice cream with my teeth - I found out in the past that others might find that strange 😂)
Sadly my grandad is no longer with us, but I love looking back on wonderful times shared whilst sharing a #VeganCornetto with my wunderbar coworkers ♥️

HIGH ON PLANTS BANANA BREAD
WHAT YOU NEED:
* 3 ripe medium bananas
* 1/2 cup whole-wheat flour
* 1 cup chickpea flour
* 2 tablespoons xylitol or brown sugar
* 1/2 teaspoon cinnamon
* 2 teaspoons baking powder
* 1/4 teaspoon Himalayan salt
* 1 teaspoon vanilla essence
* 1/2 cup almond milk
* 2 tablespoons maple syrup
* 2 teaspoon coconut oil
WHAT TO DO:
Preheat oven to 180^C.
In a large bowl, combine all the dry ingredients.
In a separate bowl, mash the bananas until smooth. Add all the wet ingredients to the mashed bananas and mix well.
Add the wet ingredients into the bowl of dry ingredients. Keep mixing until the mixture is well combined and smooth.
Pour the mixture into a greased/ baking paper lined bread tin.
Put into the oven to bake for +/- 45 mins.
I highly suggest enjoying this banana bread with some @ohmega_nutbutters almond butter drizzled on and some almond slithers! 😻✨🤷🏼♀️
I don’t want to look skinny....I want to look like I can kick some ass. I’ve been struggling with my weight for a very long time. Mainly, because I was trying to find my self worth in the wrong places. The moment I started taking action to change the things I wasn’t happy about and stopped feeling sorry for myself/ dwelling on the what ifs was the moment I started to see the change I so desperately hoped for. 🥊
Will it be easy? Nope. Will it be worth it? Absolutely.
I have decided to challenge myself to go 10 days refined sugar free. Meaning fruits are allowed 😁 I have stocked up on them for when I need that something sweet after a meal or just as a healthy snack!
I’m starting this coming Wednesday the 18th cause I’m making scones today 😬 and also who needs to start Monday? Any day is a good day to start something right?
