Two days ago I was asked by my host to make dinner for her and the family members that were in town visiting. They are all very British with traditional titles of Lady and Sir, so they are born rich and always expect perfection. It was a little nerve racking at first, but once I got in the kitchen and started cooking it just felt natural and comfortable. She wanted a salad with homemade french dressing, mashed potatoes, leeks in béchamel sauce, and pork chops on the grill. Other than that I could use whatever I wanted to add some flavor, so I raided her cabinets for various things to use then I went to the garden and found fresh herbs and used marjoram, thyme, oregano and basil. Some of these cooking utensils and equipment were very difficult to use, not the proper way to do it, or I had never used it and didn’t know how it worked. I just told myself what other chefs/cooks have told me, “at the end of the day it’s just food”. So no matter how it got cooked I knew it would be cooked and would taste great if I just trusted my smell, taste, and sight. Everything went perfectly with no complaints and I couldn’t have been happier cooking and serving them this delicious meal. I was invited to eat and drink with them and share some of my life, which felt like an honor even though they could sometimes be true pricks at times.
As for the picture, while waiting for the grill to heat up I was reading a highly recommend book, Culinary Artistry. I have been reading this book since I got here, but I’ve been taking my time to get through it to try to understand the full density of this book and make notes to keep going through. As of today I’m on the last chapter and then I’ll go through my notes and the various recipes of the book again. #greece#backpacking#cooking#grill
