The finished product/what’s on the menu this week after my meal prep a few days ago
1. Arugula and spinach
3. Roasted beets and broccoli with herbes de Provence.
4. Pinto beans with coriander, cumin, and cayenne.
5. Green lentils with sautéed garlic and onions, turmeric and a Moroccan spice blend from @spiceandtea
6. Capped it off with a drizzle of habanero @boulderhotsauce - this stuff is amazing. Who needs salad dressing??
I made enough for 8-10 meals, in less than an hour for maybe $20? (excluding herbs/spices). Eating healthy doesn’t have to be expensive. The herbs and spices can be pricey but they will last for weeks to months and are so worth the investment.
I’ve got some golden beets, red lettuce, green beans, and avocado that I need to figure out what to do with... any suggestions?
I woke up early, and for some unexplicable reason l felt energetic. And that's a big word because l haven't felt this way for ages. So l downloaded a meditation app and did a 5-minute long practice. Then l went to the gym with a friend, and we really had a good time. We laughed and talked a lot and l think this is what really matters. I've managed to prepare a delicious lunch, and l've been eating plant-based 🌱 dishes for 2 days now, and l'm proud of myself, because l want to eat what's good for my body.
