Maybe not the most gorgeous meal but still a healthy, delicious, hot breakfast using up the last of our collard greens. Buried underneath are two eggs surrounded in sweet homemade tomato sauce fortified with black beans.
Leave it to me to turn sweet into savory. “Sugar and spice and everything nice” toast in true #justreallyhungry fashion. Sourdough wheat topped with @traderjoeslist vegan pesto, tomato, home grown avocado, lime from my tree, balsamic glaze (sugar!!), @eatcleansandiego pink Himalayan salt, and red pepper flakes (spice!). I outdid myself with this one folks. Even though I’m absolutely stuffed, totally worth it! #toastlikerobin
👆👆👆When I was younger, I always admired people with dedicated collections; Postcards, stamps, books, seashells, movies...and although, I tried a few times to claim an intentional stockpile of sorts, I never stuck with anything. -
But smiles, memories and rainwater...well, I am down for storing these in my minimalism/homesteading lifestyle. -
