Chickpea spinach stew with lentils and Quinoa from Vegan Richa’s Indian Kitchen ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Friday I went to go visit my friend and her new baby girl and I wanted to bring some food for the family so I decided to make this chickpea spinach stew. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
This stew was extremely easy to make! You start by cooking the onions until translucent and then add: garam masala, cardamom and cumin. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a blender you want to combine dice tomatoes, fresh spinach, garlic, ginger, pepper , vinegar and one cup water. Once blended to a purée you add it to the onions and spices. Then you add the lentils, chickpeas, quinoa and water and cover and cook for 30 mins. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
That’s pretty much the dish! Once the 30 mins is up you mash the chickpeas as little, mix it well and then serve it with cheese! The recipe calls for vegan cheese but I used goat cheese. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

We live in a world where we give much importance to technologies and ignore those little things which give us real happiness, whether it is cell phone , television , fridge ,ac etc.
For instance take today's incident ... So i was cooking prawns and I wanted some fresh onion ginger garlic paste for the prawn curry . And unfortunately my blender wasn't working . Then my eyes went to the sill batta or stone grinder . As i was left with the only option, i started using that and soon my eyes started burning because of onions. But when I saw the end result , I was like it's worth using stone grinder instead of blender.
It's not that it was my first time , it's like you value things only when you need it the most. And from now on i will start using sillbatta at least 4-5 times a week. Dil jeet liya hai silbatte ne 😂. .
