It was my turn to make #ketodessert today. I went with cinnamon almond cookie with vanilla cream cheese frosting and #freshberries. It was a hit! Easy recipe too!
8 ounces cream cheese, softened
1/2 cup (1 stick) butter, softened
2/3 cup (I used Splenda )
1/2 teaspoon vanilla extract (no sugar added). Whip all ingredients til fluffy. Keto Cinnamon Butter Cookies Ingredients:
2 cups Almond Meal/Flour
1/2 cup salted butter (softened at room temp)
1 tsp vanilla extract
1 tsp ground cinnamon
1 tsp Liquid Stevia OR 1/8 tsp Stevia Powder OR 1/2 cup Splenda bake 300 for 15 min
Happy Memorial Day Weekend! Here is the dessert I'm bringing to our family picnic (3 of the 11 of us are keto!). It's a cheesecake mousse topped with strawberries and shredded unsweetened coconut. It is so delicious!!!! Alan so graciously helped me make and prepare the entire dessert - I love my sweet, caring, and hungry keto man! .

내가 투게더 맛 나냐고 물어보니
투게더보다 맛있다고 함....👀👉👈
1. 실온에 마스카포네 20분 정도 둬서 부드러워지면
2. 마스카포네에 한컵에 입자 고운 에리스리톨 넣고 섞음(양것 알아서)
3. 잘 섞이면 냉동실에 10-15분 둬서 조금 굳은 질감 만들고
4. 호두(or 아몬드) 갈거나 잘게 으깨서 볼에 두고
5. 굳은 마스카포네 꺼내서 적당양 호두 갈아놓은 볼에 넣고 굴려줌
6. 손바닥으로 굴려서 동글게 말아줌
7. 다시 냉장고 혹은 냉동실 행!
(냉장,냉동으로 차갑게 먹어야함!)
냉동실에 넣어넣고 하나씩 꺼내먹기 좋다!
절대로 한번에 다 먹지 말기...😶

Has anyone ever had the Mozart Kugel marzipan candy?? I've only had them once, 20+ years ago when I visited Europe. Seriously, my fondest memories revolve around food 😂. More on this in a sec.
Anyways, I stopped by TJs today and decided to pick up some hazelnuts to make #homemadenutella. I used the recipe from @minimalistbaker, with just a couple slight tweaks. I used melted @lilys_sweets_chocolate chocolate chips, then added some @hersheycompany special dark cocoa powder (mainly to darken the color) and some @lakantosweetener powdered sugar.
The recipe says you don't need to get all of the skins off, but it will smoother if you do. Challenge accepted. I'm kinda a type 'A' person, so yeah...I got ALL DEM SKINS off 🤣 #laoroflove. And the result? This stuff is pretty dang smooth! But what about the taste??.
First, mine is way runnier then store bought nutella, even before adding the melted chocolate, which I found strange since I didn't add any liquid? But then again, it's hot today. No matter, I don't care. Anyways, the TASTE. I'm a bit dumbfounded because instead of tasting like nutella, it tastes like the Mozart candy to me??!! Which I love btw, so I'm not complaining!!! This takes me back and now i'm longing to stomp around Austria and France again ❤.
This is what I love about creating in the kitchen. Sometimes your experiments don't get you the exact result you were hoping for, but instead, you get something better.
