Sometimes we run out of steam and inspiration 🤷🏽♀️🙅♂️ as to what to dish up to the kiddies as the week draws to a close. In last week’s TMix+ newsletter ( subscribe via our website) Geoff Slattery shared his super quick, super easy, super nutritious and #kidfriendly recipe for Squiggly Pasta With Carrots, For Kids. Not a recipe for the Thermomix but we’re sure you can give it a little rest. Recipe: Squiggly Pasta With Carrots, For Kids.
*200 g squiggly pasta – I prefer spiralle.
*3-4 baby carrots, grated
*virgin olive oil
*50 gms butter, softened
*zest of 1 lime (or lemon)
*1 chilli, chopped finely – (Check with your kids first?)
*a little lime juice
*1 dessertspoon poppy seeds
*fresh herbs – If it’s summer, go for tarragon or Chervil; in winter, a little coriander is worth a dash; and any other time, lots of fresh roughly chopped parsley
*grated Parmigianio Reggiano or Grana Padano
1 Cook the pasta, as instructed on the packet. While the pasta is cooking, toss the grated carrot in just-hot olive oil and add the butter, zest and chilli. Toss through, until the butter has reached that very soft stage, just before it gives up the ghost and melts.
2 Add the cooked pasta, the lime juice and poppy seeds, and toss all about until incorporated. Now, the butter will give up the ghost, and just melt.
3 Add the fresh herbs, and work through. Serve the cheese at the table.
Tonight’s dinner was delicious! 😋 All of us loved it (even my super picky 7 year old, Mallory!) 🙌 it’s been far too long since I cooked a meal for the whole family. One of the downsides to my husband working 48 hour shifts.

Dinner was too good not to share!
There used to be this Mexican restaurant that made something similar, but with carne asada, so I replicated it tonight (kind of)! .
I simply cooked ground turkey, bell pepper, jalepenos, shredded zucchini (and I would’ve done an onion if I had one), with mexican seasonings. .
Then I basically made a quesadilla- spraying a pan with oil, corn tortilla down, then meat mixture, then a little cheese. Cool and then flip. So these were like yummy stuffed quesadillas! It was super good, but I only had one because I wasn’t crazy hungry. .
Also easy to modify for kids by not adding a jalapeño to the meat mixture, or, what I did, making a quesadilla with cheese and shredded zucchini inside. 🙌🏻🙌🏻🙌🏻 .
After a looong day and then driving home disappointed... I just started cooking whatever I seen... Annd this is what I ended up with. I'm a beginner with cooking fish but it taste okay. 4 ingredient homemade pizza dough that's ready to bake in minutes?! You read that right! Oh and there's a #glutenfree option which happens to be my new favorite homemade GF pizza crust 😋
2 cups GF flour (I use @bobsredmill )
3 t. Baking powder
1/2 t. Salt
Greek yogurt (about 1 1/2- 2 cups)
Kneed together gradually adding more Greek yogurt until a playdough-like ball of dough is formed. .
Roll out to about 1/4" thick, top with favorite pizza toppings and bake at 400 degrees for 10-20 minutes (Baking time will depend on thickness and how crisp you want the crust. I usually do it for 15 to 20). .
Tonight's was bbq chicken with ranch, red onions and mozzarella, topped with avocado. .
