hey guys! here’s another twist on traditional chicken salad that’s for my Mexican food lovin peeps. you can enjoy this chicken salad on a bed of salad greens with some chia + flax crackers, on a whole wheat pita, or just by itself with cucumbers for dipping! try it out and let me know what you think 😋
Southwest Chicken Salad:
3 cups Shredded Chicken Breast
1/2 cup Black Beans
1/2 cup Corn
1/2 cup Canned Tomatoes
3 mini sweet peppers, chopped
2 green onions, chopped
1/3 cup @cindyskitchen Ranch Dressing
1/3 cup Organic Salsa
1/2 cup Greek Yogurt
1/2 teaspoon Cumin, Chili Powder and Paprika
1 teaspoon Sea Salt
If you’re not exercising self care, it bleeds into things you’re passionate about & starts affecting everything.
Food is a central source of energy, so I forced myself to get back on track today. Heaps of fresh veg in the fridge & chicken or lentils ready to go. Portioning out protein & being prepped & organised as possible because I fuck up often. 20+ meals full of protein, veggies & cooked as cleanly as possible. But I ate half a block of chocolate whilst making this.
Food is a comfort & a crutch. Someone recently opened up a whole new approach to food, prep & eating cleaner. I want to make Nationals next year, I can’t do that without being completely accountable to what I put in my face. Including that fucking m&m fruit & nut block ✌️

So, here's an example of a lower calorie and lower carb day of mine (6'2", 205 lbs male). —
You may notice I incorporate lots of fruit in my preps which I love as my go to quick energy source for workouts and/or for my volleyball. —
2 eggs/2 egg whites
Greek yogurt with chia seeds, strawberries and 1/2 scoop protein —
Snack # 1:
Oatmeal protein crepes with @nutsnmore protein peanut butter and sugarfree raspberry jelly —
Lunch # 1:
Veggie chili —
Banana and PB —
Apple and @trueprotein shake —
Lunch # 2:
Egg plant, mushroom, meatless crumble, oven roasted tomatoes lasagna with mozzarella and parmesan cheese —
Veggie burger with roasted cauliflower —
Snack # 2:
Veggies with hummus —

from top left i did roasted zucchini + eggplant, “cheesy” cauliflower roasted w/ nutritional yeast and turmeric, a brussels sprout + sweet potato hash, cinnamon sweet potato toasts, lemon-parsley salmon cakes, mini veggie egg frittatas, cinnamon hazelnut-cashew butter and washed berries✨
not gonna lie, this took me all day, but it was SO worth it! i get to have quick, healthy meals all week and nothing’s better than that 💖 should i post a meal prep plan for this one on my blog?! 🤔 hope everyone has a beautiful day!
