There’s a whole hell of a lot going on in there, I know I know. But it was surprisingly simple and new and if we’re being honest, I sent this to my dad cause I was so pleased with myself... ha! Anywho... Kabocha squash boat: • Squash: I roasted 1 small-medium (I don’t know exactly, like the size of a shrunken head) kabocha squash for about an hour w/ a bit of coconut oil and cinnamon. (Did this last night so it was good to go this morn) • Heated it back up for about 15 minutes • Topped w/: @foragerproject vanilla yogurt + raspberry chia seed jam (handful razz, 1 tbsp. Chia seeds, squirt of lemon juice, splash of water sautéed on the stove on low for a few minutes) + almond butter + homemade granola + a bit more chia seeds
This was just really pleasant and I never wanted it to end.
Breakfast at @slimakbk is the best! I had the creamy eggs with smoked salmon, and it was pleasing to my palette 😋
