It’s almost time for the summerfruit harvest to begin in earnest, and we thought we’d give you a leg up with this delicious, healthy grilled nectarine and apricot salad from @5adayNZ. It might be a bit soon to see apricots in the supermarket, but it’s never too early to plan your summer BBQ!

Serves: 8 as a side
Preparation: 10 minutes
Cooking: 5 to 10 minutes
4 Nectarines, halved and stones removed
4 Apricots, halved and stones removed
Handful fresh mint
Juice of 1 lemon
¼ cup pumpkin seeds
8 slices prosciutto
3 handfuls of salad greens (we used baby spinach and rocket)
Grill fruit cut side down on the BBQ or a griddle pan for 5 minutes or until they have softened and have charred lines
On a serving platter place salad greens, then prosciutto slices (we bunched these up), grilled fruit and top with pumpkin seeds and mint leaves
Squeeze over lemon
Refrigerate until ready to serve
As an amazing high pressure system moves across the South Island, Wesley & I will be finishing up our 3rd epic road trip across New Zealand with the most beautiful road of them all... the road home through the Southern Alps to my camper & kayak basecamp in Milford Sound.
