This Paleo Pizza Bread, inspired by @justjessieb 😍🤤💯 Guys, 10/10 would recommend! It’s the perfect fun, Friday night dinner for the kiddos, a great app to bring to any event (am I the only one already thinking about Sunday football!?), and just an all around healthy twist on everyone’s fav 🍕
For the bread
1/2 cup avocado oil
1 cup tigernut flour
1 Tbsp honey
1 tsp Himalayan pink salt
1/4 tsp baking soda
3 Tbsp water
For the filling
2 links @aidellssausage chicken apple sausage, finely diced
1/2 small red onion, finely diced
1/2 bell pepper, diced
1/4 cup chopped sun-dried tomatoes
1 handful arugula, chopped
1 tsp minced garlic
1 Tbsp dried herbs (I used oregano and rosemary)
Preheat oven to 325.
Line 9x5 loaf pan with greased parchment paper, set aside.
Sauté onion and sausage on medium/high heat until cooked through; set aside.
Add the rest of the bread mixture (oil, tigernut flour, honey, salt, baking soda, and water) to the eggs and thoroughly combine.
Add cooled sausage/onion to batter.
Add remaining filling ingredients (bell pepper, arugula, sun-dried tomatoes, minced garlic, herbs).
Combine mixture thoroughly.
Pour batter into loaf pan.
Bake for 45-50 minutes, or until toothpick inserted into center comes out clean.
Serve with your favorite marinara or pesto 🤤

Nearly all parts of this tree can be eaten or used in traditional herbal medicine. Damn forgot it was National Puppy Day or in his case National Horse Day 🐎 Here’s my Black Stallion (Great Dane) when he was a puppy. Big ass puppy huh 😂 Now he is 3 and about 6’3 -6’4 on his hind legs. His grandpa is a Champion on those Great Dane dog shows on TV 🤷🏾♂️

Homemade quinoa tortillas with black bean burrito filling
Homemade quinoa tortillas:
1. 4 cups quinoa flour
2. 3/4 cup brown rice flour or gluten free flour blend
3. 1 tsp kosher salt
4. 1 tsp olive oil
5. 1 1/4 cup hot water
Mix all ingredients in a bowl and knead with your hands until smooth. Make about 20 separate 2" size dough balls. Using a tortilla press, place a plastic ziplock bag on each side and sandwich the tortilla in between and press down to flatten. Heat up a nonstick griddle or pan and cook the tortilla for about 2 mins on each side over med heat. Serve warm.
Black bean burrito filling:
1. 1/2 onion, diced
2. 2 large garlic cloves, minced
3. 4 cups cooked black beans (I soaked raw black beans overnight and boiled in salted water for about 45 mins). 4. 1 tsp coriander
5. 1/2 tsp chili powder (mild)
6. Optional: 1/4 tsp cayenne for heat
7. 1/2 cup veggie stock (low sodium)
8. Juice of 2-3 limes
9. 1/4 cup chopped cilantro
10. Salt and pepper to taste
Heat about 2 tbsp high heat cooking oil (avocado oil or grapeseed oil) and sauté onions until slightly browned. Stir in garlic and cook for another 1-2 mins. Add ingredients 3-7 and bring to a boil. Cook until liquid is mostly evaporated. Take off heat and stir in lime juice and cilantro. Add salt and pepper to taste.
I’ve definitely been enjoying my non-smoothie breakfasts lately. Taste buds changing, slowly but surely. Wait can I take a second to say I don’t even think about coconut anymore?! Booyah 🙌🏼 Anyway everyone told me how good @butcher_box breakfast sausage was so I had to give it a try myself and OH MY GOSH! The hype is real!
