While waiting 15/20' for the water to boil and cook pasta, there's enough time to prepare this easy and healthy recipe.
For 2/3 servings we'll need:
200/300 gr. fav pasta
1 cup sliced onion
1 cup sliced carrots
1 cup sliced zucchini
5 tbs Evoo
1 tbs Tahini paste
Salt and pepper to taste
Thyme, basil, romary, sage, parsley... Fresh herbs are always welcome 🌱🌿☘️ > Heat a bit of Evoo in a pan and sauté the onions and carrots till they are tender and set aside.
> Do the same with the zucchini in the same pan, in few minutes they will be ready.
> Add carrots and onions to the zucchini and stir them gently.
> Pour the pasta over the pan and sauté with the veggies.
> Add the fresh herbs, tahini paste and olive oil, turn off the heat and mix well! 🔥🍝😋😍

Very easy to prepare!
> Wash the beets well, drain the water and chop roughly. I use to separate the stems from the leaves, cut them in little pieces and start cooking few minutes before, then I add the green! > Heat few garlic cloves and chili in a pan with a bit of Evoo, increase over medium high heat and add the beets as per the sequence above.
> Salt and cover. Cook few minutes stirring often, shouldn't need water, but in case it gets too dry, moisturize it a little bit!
> Cook your favorite pasta. When it's almost ready, add the chopped tomatoes to the veggies, just to heat them up and... Basil, I forgot it on the plant today 😱😭
Never mind, if you have it, add fresh basil and it will be perfect! 😍😋😀
