Had this thought and had some ingredients and decided to put the two together. I rolled zucchini up with cashew ‘ricotta’ nut cheese, chopped mushrooms and green onions. Baked, covered. Covered with some African tomato stew sauce, covered and baked. Brazil nuts ‘Parmesan’ with cilantro.
Tasted like little lasagna bites. A definite hit!
Attempted to make a Jalapeño popper with twice baked potatoes, seasoning, green onions. I couldn’t tell you how they tasted because all 6 slices disappeared. I barely got a pic with 2 on the tray. 😱Guess they were a hit too since they wanted more!😜
My nice cream smoothie for now and one for later today. Bananas, dates, wild blueberries, mangoes, grapes, dulse flakes
For lunch I blended up my salad via a @vitamix spinach, lettuce, cucumber, cherries, grapes, pineapple, dulse flakes, water, lemon.🤤
So good I got 3 out of 5 kids to drink a glass AND ask for seconds! SCORE!!

• I know I have posted this blue spirulina Bowl recipe a gazillion times.. but seriously! Instead of adding mango, I added something I’ve never tried before; KUMQUADS! You see those small orange-lookalike fruits? That’s it! You can eat the whole fruit, don’t peel it, and they are full of vitamin C, iron, potassium and phosphorus! -

1 cup coconut milk/plant milk
1 cup frozen banana
1 cup chopped kumquats
1 tbsp hemp seeds or add protein powder
1/2-1 tsp blue spirulina powder -
