My fav salad. Apple Quinoa Pecan with honey lemon vinaigrette. I made mine over green leaf lettuce but any greens are good. Can be made in advance by adding the greens just before serving or without them. I used an online recipe and changed it up omitting the cheese and added sugar snap peas, English peas and in other versions I have also added grapes, shredded carrots and asparagus. 1 - #Salmon, #roastedcarrots, #butternutsquash, cucumber sticks, and tons of #parsley, drizzled afterwards with a maple mustard dressing.
2 - #Quinoa with red bell pepper & onion, sautéed #broccolini with onion powder, #sauerkraut, and a homemade #lactofermented pickle.
3 - Roasted #babypotatoes, peas & carrots with #nooch, and #spaghettisquash with sautéed button #mushrooms. All topped with a creamy lemon sauce.
4 - Spiced #chickpeas & onion, steamed #artichoke heart, and quinoa.
5 - Veggie #stirfry with chicken breast, sauerkraut, #springgreens, and lemon vinaigrette.
Eating well (and deliciously😋) does not have to be difficult! More than half of each of these plates are dinner leftovers, with a few additional fresh & fermented elements, and a simple dressing or topping, to liven them up. 🌟
