Dinner is higher in points but one of our favorite meals. I found this when my husband and I first started living together 10+ years ago. It's kielbasa slow cooked with sauerkraut and beer/brown sugar mix! I don't even like sauerkraut but I could eat this whole thing! #18smartpoints

BBQ Pulled Pork with Smashed Potatoes 👏 (I did the pork and potatoes in the Instant Pot)
Ingredients: 1 1/2 pounds pork tenderloin 1/2 cup Wicked Good Slow Cooker Sauce 2 tablespoons Natural Grapeseed Oil divided 3 cups broccoli slaw 2 teaspoons Italian Salad Dressing Mix 2 tablespoons light mayonnaise 1 tablespoon apple cider vinegar 6 pounds small red potatoes
Place pork tenderloin in a slow cooker with 1/4 cup Wicked Good Slow Cooker Sauce. Cover and cook on high for 3 hours or low for about 6 hours or until tender and shreds easily with a fork. Toss shredded pork with remaining 1/4 cup Wicked Good Slow Cooker Sauce. While the pork is cooking, prepare a slaw by combining the broccoli slaw vegetables with Italian Salad Dressing Mix, light mayonnaise, apple cider vinegar, and 1 tablespoon Natural Grapeseed Oil. Refrigerate until you are ready to serve. Boil potatoes in a large pot of water for about 25 minutes or until fork tender. Transfer to a lightly greased sheet pan. Using a flat surface, such as the bottom of a measuring cup, press each potato until mostly flattened. Brush potatoes with remaining 1 tablespoon Natural Grapeseed Oil. Bake at 450 degrees F for about 25 minutes or until browned and crisp. Dump-and-go Thai green chicken curry
This was one of the first things I cooked after having Ewan that wasn’t a ready meal!
6 chicken thighs
1 can coconut milk
3 tbsps Thai green curry paste
1 tbsp fish sauce
Thumb size piece of ginger, grated (for extra laziness use the ready chopped stuff)
1 bag pre chopped veg (I’ve used butternut squash & sweet potato. Peppers, mini sweetcorn, mushrooms etc would also work)
Couple of handfuls of frozen peas
2 bags of microwave rice pouches (because sometimes there isn’t even time to boil rice!) Method:
1. You have a spare five mins because the baby is in the jumperoo (or similar)
2. Chuck all the ingredients into a slow cooker (except the rice) and put on high for 3 hours. Or put into a deep sided saucepan and cook for 30 mins or until the chicken is cooked through. I prefer the slow cooker because it doesn’t matter if you forget about it, which is likely. Plus you can leave it in there until dinner time.
3. When you finally get a chance to eat, microwave the rice and dish up the curry
4. Crack open a beer, you bloody deserve it (optional)
Not the prettiest meal but it tastes good, requires zero effort and is reasonably healthy. Win.
You can keep it veggie by using aubergine instead of chicken. Warning, this will require some chopping!

Slow Cooker Mexican Honey Garlic Chicken & Potatoes
Winner, winner, slow-cooker chicken dinner! This sweet-and-savory recipe comes together quickly for warming Mexican flavors that are perfect for any season.
Taco Seasoning Mix
6 cloves garlic, finely chopped
400mls chicken stock
2lb red potatoes,
4 Chicken Fillets cut
1 lime, cut into wedges
2 red onions, thinly sliced
2 tablespoons cilantro
Spray or line your slow cooker. In large bowl, mix honey, taco seasoning mix, garlic and salt.
Add potatoes, and toss to coat. Using slotted spoon, transfer potatoes to slow cooker. Add chicken to bowl with honey mixture; toss to coat. Arrange chicken on top of potatoes in slow cooker. Pour any remaining liquid over chicken.
Cover; cook on High heat setting 3 to 4 hours or until potatoes are tender. .
