On a breezy chill day, I usually chill-out on cooking heavy dishes for my family when it’s my time to cook. This meals highlight were the @westminsterbakers premium restaurant oyster & soup crackers and food lions mexican blended cheese. In the soup you have broccoli, mixed bell peppers, seasoned goat meat with asparagus ... the hot pepper were grilled with cheese, and stuffed with all the veggies having the oyster soup crackers place to the side of the dish for dipping. This light and easy to prepare dishes took about 45mins minus prep time. Happy Friday everyone! How’s your week been? My instas been glitching today so I’ve saved posting for tonight in the hope that it sorts itself out - anyone else had issues? Anyway, the last couple of weeks I’ve been doing epic amounts of food prepping (to help with anxiety - keeping busy & all that) but also because nothing makes me happier than a freezer full of ready prepped food. Ever since I did my first #IQS8wp I’ve learnt new & inventive methods of food prep. This shot is me mid-prep grating courgettes which I always have a stash of in the freezer now. Some of these went into the courgette & pumpkin spiced cake, the rest were divided into 1 cup portions for use in smoothies (grated courgette makes an excellent thickener & extra portion of veggies without any tell-tell veggie taste), porridge, soups & even to bulk out dishes like spag bol. I also chuck some into cheese toasties with pesto for a quick veggie hit. I do this for sweet potato/ pumpkin purée (cause who has time to make it fresh each time you need some?) onions (either chopped in the food processor & frozen raw or slow cooked & frozen when caramelised) & any other veggie that is a bit of a pain day to day when you’re exhausted & don’t want the hassle of chopping such as celery, leeks & carrots. Anything for an easy life, me. Food aside, have a super weekend everyone whatever you’re doing. Tomorrow I’m attending the amazing @thepracticalbalance final yoga teacher assessment (🤞🏻 I know you are going to be awesome) followed by a weekend of studying & maybe some wallpaper stripping whilst OH plays around with his new car that’s being delivered tomorrow 🚙🙄
