Monday is a great day to start fresh. ✨ Conquered leg day! The gym was fairly empty which was surprising for a Monday. But, then again as the end of the year approaches I’ve noticed less people go to the gym. I have less than 70 days to reach my 2018 goals so I’m not slowing down. True confessions, tho I did eat a donut today. Not part of my goals. And I paid for it 30 minutes later when I got a headache. It was tasty 😋 but not sure it was worth the aching in my head. 😩

I cry when dogs die in movies, I sometimes make stupid jokes that no one thinks are funny, and I can get very awkward sometimes 🤣.• I am me, and while it’s taken a good amount of time to appreciate myself for all that I am, I realize now that I’m finally understand WHY I am. Life gives you lessons and as time goes on you learn from those lessons, who we are is just all those lessons or lessons yet to be learned all smushed together. 🙈 #me

unterrühren und mit
ordentlich süßen. Ruhig übersüßen, etwas Süße wird beim Backen verloren gehen. Bei diesem Kuchen kommt es wirklich auf Süße und Aroma an, damit die Kidneybohne geschmacklich nicht durch kommt.
Teig etwas ruhen lassen, noch einmal durchrühren und in eine Backform füllen.
Bei 180 Grad ca. 40 Minuten backen. (Stäbchenprobe!) Im Ofen auskühlen und über Nacht durchziehen lassen.

Blueberries ❤️ on their own, in a cake.. I can’t get enough of them. This cake is converted from my Gluten Free Blueberry pudding cupcakes.. into a simple cake! It lasted a day in this home of mine 🤗 It is insanely fluffy and light too. If you want to do the same, simply pour the mix into a round medium baking tin and bake at 180c for around 30 minutes. Or until your skewer comes out clean. Looooveed the addition with thickened cream. Bones, slim, skeleton all nicknames I was given at some point. But no more. •
Some times we don’t see our progress as clearly as those around us. •
My kids have especially seen my progress as I am in less and less daily pain and can do more and more with them. Today my oldest as I was chasing him playing dinosaurs. He says, “mommy your doing it! Look you can run, now! Good job!” •
Melts my heart and reminds me why I take the time everyday to exercise this vessel. It truly is a gift from God. I am doing my best to take care of it. •
Easy Vegan Iron! 🌱👌🌱
There’s only one type of iron I struggle to make room for in my life. I’ll prioritise lifting iron in the gym 5 days a week and I’ll prioritise eating iron at each meal… however, I seem to have a bit of a block surrounding that handy household appliance that smoothes out your clothes! 😱🤣😱
As a boyfriend once mortifyingly shared with his mother: “Kate doesn’t really iron, she just buys clothes so tight they don’t need ironing!” Well, wasn’t I the charmer? (that was almost 20 years ago)
Here are a few awesome plant based sources of iron.
💚 One. Greens like: Spinach, swiss chard, collard, kale, broccoli and asparagus.
💚 Two. Nuts and Seeds like: Cashews, pumpkin seeds, tahini and cacao.
💚 Three. Beans / legumes like: Lentils, black beans and chickpeas.
💚 Four. Other Veg / fruit like: Morel mushrooms, olives, raspberries, dried apricots, tomato. ---------------------------
Some other easy vegan iron sources include: Spirulina, Tofu, Iron fortified whole grain breads and cereals, Coconut water, Nutritional yeast.
If like me you’re a reluctant cook simply scatter any of these into your existing smoothies or over your breakfast bowls / oats: * 25 grams pumpkin seeds.
* 25 grams raw cashews.
* 25 grams cacao nibs. * 50 grams raspberries. ---------------------------
And any of these into your existing curries or over your salads / stir fries / tacos / nacho’s: * 25 grams pumpkin seeds.
* 25 grams roasted cashews.
* 1 tablespoon tahini.
* 1/2 teaspoon spirulina.
* 50 grams roasted chickpeas.
