Can anyone say CAKE?! 🍰💕 Yesterday was mine and Mr K’s third wedding anniversary - three whole years!! I can honestly say that I love him more every day than the day before; he is my best friend in the whole world, my heart, and the only one whose smile never fails to make me go weak at the knees 🙊💕 Of course it’s not a celebration without some kind of cake, and I wanted something specific to our anniversary. Three years of marriage is symbolised by leather; hardy, durable, and long lasting - just like a good marriage! So I searched and searched, until I found a very old recipe for ‘Burnt Leather Cake’ that totally intrigued me. The original recipe was, of course, chock full of butter, sugar and wheat flour, so I tweaked and subbed and played with all the ingredients, until I felt pretty confident that I could make an everything-free version which would rival the original.
I made a light, grain-free caramel sponge with coconut flour, and delicious caramel jam (for the center) by slow-heating granulated coconut sugar and a couple of other secret ingredients.....it results in a thick, silky caramel which is always a real treat 🧡
The frosting was a lot of fun to make too, although I have to confess that the first attempted batch was a total bust! I tried to adapt the instructions from the original recipe (despite thinking that it looked like a disaster before even starting) and I ended up with a weird, gloopy burned liquid which refused to set 😳😂 So today I tried again, following @theurbanposer ‘s gorgeous Swiss meringue recipe, subbing out the maple syrup for organic agave syrup (for the simple reason that I had run out of maple) and OH MY GOSH it was perfection!! (If you don’t already own Jenni Hulet’s book ‘The Paleo Patisserie’ then what are you waiting for? Go! Buy it now! It’s a total grain-free game changer!! 😁✌🏻) The trick with burned leather cake is to make your caramel first, heating it up to smoking point so that it takes on a distinctive burnt but rich flavour, and then adding most of it in to the sponge mixture before baking.
The end result was moist, sweet, decadent, and so very delicious!! Happy Anniversary to us 😍😘❤️
The other half of the @_goodfellaspizza falafel pizza was dinner after class😋 Too lazy to cook but actually wanted a hot meal. And then I started the second Easter egg that @rea2793 got me (and I’ve still got one more Easter egg from my parents)! 🙄 Little disappointed that @cadburyuk didn’t include a mini packet of Cadbury creme eggs like it said on the box! Had half the egg 🍫😋💞
