To eat a healthy, tasty and nutritious lunch on the go is always challenging, so I always aim to prep my food the night before😋 This took me 15 minutes to make..Cavolo Nero (black kale)🥬 + carrot 🥕 lightly steamed (5 mins)left to cool. I then added broccoli & bean sprouts, chopped parsley + mint. Cashews + hemp seeds. I dressed it with lime, olive oil, tahini. Choc chip cookies for lunch boxes 🍪😋 (plate painted by my daughter!)
1/4 cup maple syrup
1/4 cup oil
1 tsp vanilla
1/2 cup plain flour
1/2 cup wholemeal flour
1 tbsp ground flaxseed
1/4 tsp salt
1/2 tsp baking soda
1/4 cup vegan choc chips

No matter how bad you are at cooking, you can definitely make soup noodles 🍜 this lunchbox has colour, flavour and protein. I usually made mine at night and bring the soup base (usually miso) to work and add hot water to it.

Tonight I have made a delicious shepherd pie
About 1kg of potato
1 red pepper
2 garlic cloves
1 hand full of frozen green peas
3 cups of dehidrated minced soy
200 tomato passata
1 cup of oat milk
2 table spoons of vegan butter
I started by chopping up and boiling the potatoes just with salt and stock.
While the potatoes were boiling I chopped, first the onion, than the garlic and the paprika and started frying them in a frying pan.
Once the onion had gained some colour I added the tomato sauce, 2 cups of hot water from the potatoes and the soy mince. At this point I also added the spices and let it simmer.
When the potatoes were boiled, I drained most of the water except about 2 cups of water. Added the oat milk, the butter and the nutmeg. I proceeded than to to mash the potato untill smooth. The mash potato is than ready.
By this time the sauce should also be ready.
I preheated the oven at 250c for about 10 min.
I put in a layer of mashed potato covering the bottom of the tray. After that the sauce and another layer of potato, smoothing up the top layer of potato with a spoon.
It was then sprinkled with grated vegan cheese and went in the oven for about 30, untill the cheese melted and got some nice colour.
This should serve about 6 people.
