Fried tomato, pepper n chickpeas with Avo, rice and a BIG BIG dollop of hummus. Did anyone else hear about how different coloured peppers aren’t different peppers they are just at different stages of ripeness? Mad. I don’t usually like green pepper (or pepper at all) but it’s winning me over v slowly 🐍 (this was my lunch btw)
Life’s better with you!! 💕🤞🏾💋When I was 18, my older brother Dave said to me, ‘if you follow that dream of yours and actually move to Hawaii (I grew up in the prairies of Saskatchewan, 🌾Canada), be careful, you might fall in love with some surfer boy and live in some shack on the beach for the rest of your life!’ I laughed and said “good!!” ;) And that’s exactly what happened (minus on the beach, those shacks are actually millions of dollars... 😜) It took a solid week before Shem proposed almost 12 years ago now! Young, naive, maybe 14 dollars to our name and no logic invited into the equation...some how we made it work! It wasn’t easy but what is! I can’t imagine life any other way and forever grateful for not questioning my heart! Its gotta know more than we think we do! Do you believe that? You ever think about your future? The different chapters of life you’ll enter? What’s going to happen, who you’re going to meet, who you’ll fall in love with, what kinda job you’ll pursue, if you’ll have kids,if you’ll travel, if you’ll live some of your dreams and in the end what will make you look back on it all and make you happy? Growing up I had a lot of dreams. None that seemed attainable to be honest. Hawaii for example seemed like it didn’t even exist, I use to go to blockbuster looking for movies that had Hawaii in it just so I could see what it could be like! (Before the google search was a thing 😂) I decided that if I kept praying and did what I could to invite those dreams to transform into realities, work super hard, that my chances would be better! Life is always full of the unknown, it still is, but one thing I believe for sure is... each one of us is special and there is a unique life with unique challenges and triumphs thats waiting to unfold and make our life full! 🌮 Vegan Oven Baked Tacos for Dinner! 📷 by 🚨🚨Vegan Cheese Sauce Recipe: 1 cup cooked white beans, such as cannelini
1/2 cup plant milk of choice, preferably unsweetened
1/3 cup vegan cheese shreds, OR 5 tbsp nutritional yeast
1/2 tsp salt
1/8 tsp garlic powder
If using nutritional yeast, add 1/2 tsp white or apple cider vinegar (can be omitted)
optional 2 tsp vegan buttery spread or olive oil
Drain and rinse beans if they are canned. Blend together all ingredients except cheese, either in a blender or with a hand blender. Transfer to a pot, and add the cheese, if using. Heat on low, stirring occasionally, until desired serving temperature is reached and optional cheese is melted. Add more milk of choice if a thinner sauce is desired.
Fill some tortillas with roasted peppers, onion, kidney beans, vegan cheese sauce, and spices to taste.
Bake in the oven at 390° F (200° C) for about 10-15 minutes.

I love the colours of the farmers market. I was able to source all these ingredients (sans the avocado) from my garden or by taking a trip to the local market! How could would our bodies feel if we nourish it from the inside? Instead of reaching for quick feels ..reach for eats that make you feel good for hours, days and years after eating it continuously! You truly are what you eat..your skin ..hair..organs all need good food and exercise to thrive. 🥦🥝🍏🍒🍅🍎.
What did you eat today? I started my day with a kale smoothie with more kale and parsley than usual! My girls are at school so I made it just for me! 😋.
Falafel recipe is on another post a few back. I love falafels! 💕. Made baba ganoush and stuffed it inside my avocado (excuse the ripeness of it lol!).

”So, starting from the age of 15 months, the mother cow will usually be artificially inseminated. Farmers mechanically draw semen from a bull, and then force the female cow into a narrow trap, known as a “cattle crush”, where they will brutally impregnate her. When she gives birth, her calf will typically be removed within 36 hours, so the farmers can steal and sell you the milk that is meant for her baby. Wildlife experts say that a strong bond between cow and calf is formed quickly after birth. Following that callous separation, the mother will bellow and scream for days, wondering where her baby is. The answer depends on the gender of the calf. If male, he will probably either be shot and tossed into a bin, or sold to be raised for veal, which delays his death by just a matter of months. But if the calf is female, she will usually be prepared for her own entry into dairy production, where she will face the same cycle of hell that her mother is trapped in: forced impregnation, the theft of her baby, and a return to the cattle crush two or three months later.” - Chas Newkey-Burden, The Guardian
Dark Chocolate Salted Caramel Tart by ❤️ Recipe
1 cup Medjool dates (soaked if not soft)
1 1/2 cups raw almonds & pecans
1/4 cup shredded coconut
1 TBSP almond butter
1/2 tsp sea salt
1/2 tsp ground cinnamon
4-6 TBSP cocoa powder
Vegan Salted Caramel
1 cup pitted Medjool dates (soaked if not soft)
1/2 cup coconut nectar
1/3 cup canned full-fat coconut milk
1/4 cup almond butter
1 tsp vanilla extract
Large pinch of sea salt
7 ounces dairy-free dark chocolate (70% or higher), chopped
1 1/4 cups canned coconut cream
Pinch of sea salt
For brownie crust, add all ingredients to a food processor and blend until you have a slightly sticky dough that comes together when you press it with your fingers.
Press the crust onto the bottom and up the sides of of a 9-inch tart pan with removable bottom. Freeze for 20 minutes to firm up.
For salted caramel, add dates to food processor until it starts to come together into a paste. Add remaining ingredients and blend until creamy and thick. Pour caramel into the chilled tart crust. Put in the fridge while you make the ganache.
For chocolate ganache, add coconut cream to a saucepan over medium-high heat until steaming but not boiling. Pour over the dark chocolate and let it sit for 1-2 minutes. Then, carefully stir until chocolate is melted and smooth. Cool to room temperature.
Pour cooled chocolate ganache over chilled tart and smooth evenly with a spatula.
Refrigerate the tart until set, 2-4 hours. Before serving, let tart come to room temperature. Enjoy!

So many people still wrong believe you need to consume meat/dairy to gain muscle. It's simply not true, and by continuing to consume animal products they're walking themselves into disease later in life.
In 2013, leading U.S. health care provider Kaiser Permanente, with more than 9 million health insurance subscribers, published an article in its medical science journal recommending that physicians consider recommending a plant-based diet for all their patients. The article notes:
“Healthy eating may be best achieved with a plant-based diet, which we define as a regimen that encourages whole, plant-based foods and discourages meats, dairy products, and eggs as well as all refined and processed foods … Physicians should consider recommending a plant-based diet to all their patients, especially those with high blood pressure, diabetes, cardiovascular disease, or obesity.”
...And especially if you don’t want to develop those diseases in the first place.
