Whole 30 Day 10 • #dinner • ground turkey stir fry 🤷🏼♀️ tbh I totally threw this together last minute & it was definitely my least favorite meal I’ve had so far on Whole 30... it wasn’t terrible, just nothing special. I didn’t go by a recipe... I had been traveling all day & we got home @ 8:00 pm! We’ve been out of town so I had no groceries... but I knew I had this frozen ground turkey & frozen veggie medley, so I just kinda threw it all in a pan with some random seasonings! I‘ve been meaning to buy some coconut aminos for meals like this! I sprinkled some salt, pepper, garlic powder, ACV, balsamic vinegar, bone broth, garlic powder, onion powder, red pepper chili flakes, & turmeric (hence the yellow color). It was definitely edible but next time I’ll be using coconut aminos & going by a recipe! & maybe adding some cauliflower rice 😋 not pictured: a handful of cashews as my “plated fat” & a couple of Rowan’s apple slices he didn’t eat! *sidenote* in the Whole 30 book, there’s a “timeline” telling you what to expect with each day & how you might feel based on thousands of people who have done it before... the timeline says day 10 & 11 are the hardest days... I can totally see that. I think a lot of the reason that’s been my experience is because of traveling all day today.. I’m so used to gas station candy & drive through food & just “easy”... but instead I didn’t eat lunch with my family like we usually do on Sundays before we head home... I packed a lunch for the road consisting of hard boiled eggs, avocado, bell peppers, pecans, & carrots... good, but boring. The drive home was sooooo long & hard & I found myself wanting to stress-eat/comfort-eat. But I stayed strong! I am determined not to quit & to finish this challenge strong.. I don’t think I’ve ever committed to anything for 30 days like this & I want to prove to myself that I can do it! I don’t want to be a quitter. I want to learn to do hard things & learn self-discipline. So, I press on. Larry planned the meals and did the grocery shopping while I got my hair done today. What a treat! Chicken apple sausage, Carnitas salads, lemon garlic grilled chicken, etc! Had to return the favor and made one of our favorite dinners tonight. So I haven’t been working out the past month or so, which has given me a lot of time to really focus in on my nutrition and commit fully to this round of Whole30. Without the need for extra energy, I haven’t even been hungry for 3 full meals each day, so today was: egg, broccoli, and avocado scramble with a side of Pederson’s compliant bacon and black coffee for breakfast, some refrigerator pickles, carrots, and green beans for lunch, and beef bulgogi wraps for dinner. Well I’m ready to get my metabolism working harder, so I’ll be back to a regular at-home workout routine starting tomorrow! This means I’ll be adding in some sweet potatoes to my nutrition for extra energy! It’s almost summer! Who else will be working out with me?? 😉🌞 🏊♂️ 👙💪

Sunday eve homemade dindin! @jjcooke89 is still in recovery mode from his knee surgery Friday, so my goal was to pack some major nutrients into this meal to help his knee healing and my gut healing. Which culminated in this healthy yet comforting and delish #feast. Also, #whole30friendly. 🤤
Roasted salmon with dill and lemon, braised kale cooked in beef #bonebroth, mashed potatoes and roasted carrots. All organic, all divine. All #AIP & #Paleo except for the potatoes! Sub those for sweets to make it compliant!
I have been looking forward to making tonight's dinner since I saw @paleo_powerhouse roast chicken two days go. Then I went to @anacortesoil where I tasted and subsequently bought cara cara orange/vanilla white balsamic vinegar and knew that I would be making a salad to go with the chicken and using the balsamic vinegar as the dressing. Seriously, that balsamic vinegar. I just can't even. It's so good. If you come to Anacortes go to the oil and vinegar tasting bar. Amazing! As an appetizer we had a steamed artichoke with lemon garlic aioli. Healthy, delicious and aside from some goat cheese on the salad #whole30 compliant.
Yesterday was day 13. This round of Whole30 is going by so fast! I learned how to make my own pickles yesterday and it was super easy! And I also discovered that I could basically eat Teri’s pork roast every single day and never get tired of it. If you don’t follow her over on IG @nocrumbsleft you absolutely must! If you’re scared to try and commit to a Whole30, Teri’s recipes can get you through the whole 30 days and beyond!
I heard someone in the cooking class we took mention a walnut crusted salmon they made and since I've been obsessed with walnuts lately I knew I had to try it! It came out even better than expected! Highly suggest trying this if you're looking for a new way to make salmon. 👌🏻
To make: add walnuts, garlic powder, salt and pepper to a food processor and pulse. Pour the mixture onto a plate, rinse salmon, pat dry and press into the mixture. Place on a baking sheet lined with parchment paper and bake at 350 for 15-20 minutes. Finish under the broiler for a minute or two to brown the walnuts more.
My first pair of pants since last year, and after all of this weight loss I'm so excited to finally have a pair that fits. I'm also really happy to see I'm in the single didgets, even though that doesn't really matter. I'm much happier with my body than I've been in a long time. (:
